Vegan Comfort Food is ESSENTIAL!

It's not that we hate meat.  In fact, when we were eating it, there were so many things that we loved about it!  But alas, for health and other reasons, we decided that vegetarian was a path down which we need to journey.  And it has been a culinary blast!  But I personally love comfort food and was nervous that I was going to miss out on that.  Hence the search for some vegan/vegetarian cuisine to replace traditional comfort food.  My discovery/adaptation: SLOPPY JOES!  That's right folks.  We may be food snobs, but you can always win our hearts with messy, tomatoey goodness. So put on your favorite record as we do and get to cookin'!

Vegan Sloppy Joes

1 tablespoon canola oil
3 cloves garlic
4 mini sweet red/yellow peppers (or 1 large pepper)
2 shallots, chopped
2 1/2 cup tomato sauce
1 12oz pkg Smart Ground
2 tablespoon wasabi mustard
2 teaspoon chili powder
1 tablespoon tamari or soy sauce
1/2 teaspoon pepper
1 teaspoon sugar
6 toasted hamburger buns

Preparation:

In a large skillet, saute the garlic, peppers and shallots in canola oil for 3 to 5 minutes, or until soft. Reduce heat to medium low and add the remaining ingredients (except buns) and stir well to combine. Allow to simmer for at least 15 more minutes.
Spoon onto hamburger buns and serve hot.
